SWEET POTATO BAKE

SWEET POTATO BAKE

A great baked sweet potato recipe to try !
Ingredients:

* 1 can (16 to 20 ounces) whole sweet potatoes, halved lengthwise
* 1 1/4 cups brown sugar
* 1 tablespoon plus 1 1/2 teaspoons cornstarch
* 1/4 teaspoon salt
* 1/4 teaspoon cinnamon
* 1 teaspoon shredded orange peel
* 1 can (approx. 16 ounces) apricot halves
* 2 tablespoons butter
* 1/2 cup pecan halves

INSTRUCTIONS:
Place sweet potato halves in a buttered 11x7-inch baking dish. In a saucepan, combine brown sugar, cornstarch, salt, cinnamon, and orange peel. Drain apricots, reserving syrup. Stir 1 cup of the reserved syrup into the cornstarch mixture. Continue cooking and stirring over medium heat until mixture comes to a boil; boil for 2 minutes. Add apricotss, butter, and pecan halves; pour over sweet potatoes in baking dish. Bake, uncovered, at 375° for 25 minutes.

BAKED APPLES AND SWEET POTATOES
RECIPE

INGREDIENTS
SYRUP:
  • 1 c. water
  • 1/2 c. white sugar
  • 1/2 c. brown sugar
  • 2 tbsp. cornstarch
  • 1 stick butter
INSTRUCTIONS
Mix above ingredients and cook until thick. Arrange alternate rows of sweet potatoes and apples in casserole. Pour syrup over all and bake at 350 degrees until brown. May use either canned or fresh sweet potatoes.The baked sweet potato recipe is ready to serve..enjoy !

INGREDIENTS
  • 3 c. mashed sweet potatoes
  • 1 c. sugar
  • 1/2 tsp. salt
  • 2 eggs, beaten
  • 1/2 stick of butter
  • 1/2 c. milk
  • 1 tbsp. vanilla
TOPPING:
  • 1/3 stick butter
  • 1 c. brown sugar
  • 1/2 c. flour
INSTRUCTIONS
Mix the above ingredients together and pour into 11 x 13 dish. Make topping of 1/3 stick butter, 1 cup brown sugar, 1/2 cup flour.
Sprinkle over first mixture. Bake at 350 degrees for 30 minutes. The baked sweet potato recipe is ready to serve...nice one !

BAKED STUFFED SWEET POTATOES

BAKED STUFFED SWEET POTATOES

INGREDIENTS
  • 4 medium sweet potatoes
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1 tablespoon milk
  • 1 can (8 ounces) crushed pineapple, drained and reserve liquid
  • 6 marshmallows

INSTRUCTIONS
Bake sweet potatoes at 450° until soft. Cut each sweet potato in half lengthwise and scoop out potato, leaving shell intact. Mash sweet potatoes with butter, salt and milk, along with 1/2 cup
crushed pineapple. Add a little more milk or butter if necessary.
Fill sweet potato shells. Slice marshmallows in half and top each sweet potato with two halves. Top with a spoonful of crushed pineapple.

Put reserved pineapple syrup or juice in a saucepan and bring to a boil. Drizzle each sweet potato with a little of the juice. Place sweet potatoes under broiler and broil until browned. The baked sweet potato recipe is ready....nice ! Enjoy it !

BAKED SWEET POTATOES

BAKED SWEET POTATOES ...a traditional baked potato recipe to try ! Nice one !

INGREDIENTS
  • 6 large sweet potatoes
  • 1/2 cup Splenda
  • 1 quart orange juice
  • 2 tablespoons cinammon
  • 2 tablespoons nutmeg
  • 1/4 tablespoon vanilla
  • 1 stick sweet butter

INSTRUCTIONS
Boil sweet potatoes, drain and cool. Peel off jackets and slice lengthwise.
Place in 2 layers in a oven safe casserole or all purpose aluminum pan. Sprinkle 1/2 Splenda on each layer. Place orange juice and butter in a 2 quart sauce pan.
Heat at medium and add cinnamon and nutmeg and vanilla. Stir until it reaches a soft boil.
Reduce heat and let simmer for five minutes. Pour over sweet potatoes.
Cover pan and bake for 50-60 minutes at 350 degrees. Uncover and bake for extra five minutes to brown top. The baked sweet potato recipe is ready to serve...great taste ! Nice one !
