
BAKED OR ROASTED SWEET POTATOES
Ingredients

4 medium sweet potatoes

Olive oil (optional)

Salt (optional)
Instructions

Preheat oven to 400°F (200°C).

Scrub sweet potatoes clean; pat dry.

Pierce each one several times with a fork.

(Optional) Rub lightly with olive oil and sprinkle with salt.

Place directly on the oven rack or on a baking sheet.

Bake 45–60 minutes, depending on size, until very soft when squeezed.

BAKED SWEET POTATO INGREDIENTS
- 1 lb. sweet potatoes
- 1-2 cloves garlic
- lime juice (1 lime)
- 2 tablespoon olive oil
- sea salt, to taste
- pepper (for those who love it spicy)
Peel sweet potatoes and cut into medium size wedges; soak in water for about 10 minutes.
In a bowl, mix all ingredients making sure the sweet potatoes are all covered with the oil.
